Before the test
- Complete at least three full 40-question practice runs on this site
- Drill weak topics using topic mode — especially temperature and cross contamination
- Memorise the danger zone (5°C–60°C) and key temperatures (60°C hot hold, 5°C cold, 75°C cook)
- Review the 10 declared allergens
During the assessment
- Read every question twice — many wrong answers come from misreading "NOT" or "EXCEPT"
- Eliminate obviously wrong options first
- When unsure, choose the answer that best protects public health
- Most RTOs require about 80% to pass — aim higher in practice
A simple 5-day study plan
- Day 1: Take a full 40-question practice test to find your weak topics.
- Day 2: Drill temperature and the 2-hour/4-hour rule until they are automatic.
- Day 3: Drill allergens and personal hygiene; use flashcards on the go.
- Day 4: Cover HACCP and cross-contamination.
- Day 5: Sit a timed full test. If you score 80%+, book your assessment.
Common mistakes to avoid
- Memorising numbers without understanding why: the scenario questions will catch you out.
- Assuming gloves replace hand washing, or that cooking removes allergens (it does not).
- Forgetting that food in the danger zone for 2–4 hours must be used immediately, not refrigerated.
- Rushing: misreading "NOT" or "EXCEPT" loses easy marks.
